Those unfamiliar with the Mae’s Bakeshop pop-up should expect expertly crafted cakes, pastries, and other sweet treats. Fogg spent six years working under Emeril Lagasse at his flagship restaurant until it was closed by the COVID pandemic. After a bit of baking from home, Fogg launched the Mae’s Bakeshop pop-up.

“I’ve had this concept for quite a few years, and COIVD gave me the opportunity to actually start working on it,” he recently told What Now New Orleans. He added that his approach to pastry is Southern-inspired, and he drew a contrast to the many local bakeries doing French pastry.

“If I had a choice between a biscuit and a croissant for the rest of my life, I’m choosin’ a biscuit,” he noted wryly.

Fogg’s strong pedigree is evident in the irresistible treats seen in the Mae’s Bakeshop social media posts, which include pictures of satsuma meringue pie, sweet potato pie topped with sugar cane marshmallows, and king cake monkey bread; for which the bakery is currently taking pre-orders.

On the bakery’s official website, Fogg pays tribute to the women in his family and says many of his recipes come from them. He said the name “Mae” is a family name and the bakery is meant to pay tribute to “the legacy of these great women.”
